Anyone covered a wooden boat with any of the products used to line pickup
bed.

Yes it would work fine.
There is a better product available that is smooth without the rubber
granules.
Sanitred permaflex is a 100% solids polyurethane coating
and you dont need antifouling bottom paint after you use it.

Local guy had it put on a Boston Whaler (fiberglass obviously) and it
worked fine except for cleanup. Nice traction but he said it was
miserable to clean.
