What defines acceleration in a boat?

DSK suggests that a Mumm30 "accelerates faster than a beach cat". Now
while that may or may not be BS it raises an issue. if you wanted a baot
to really accelerate well what sort of rig should it have? What about
SA/D? What boat(s) have the highest SA/D and are viewed as 'rockets'?
