If on a river where firepan and port-a-potty are required,
you might want to look at the AIRE Lynx 2 inflatable kayak.
An EcoSafe SeaKayak toilet fits nicely in front or back,
and a stainless-steel catering dish works well as a firepan,
nested under a soft cooler.

It depends a lot on what rivers and what time of year. Cold weather and
lots of required gear will need a bigger boat than most of what is
available today. I, and most of the group I paddle with, have used
Perception Overflow for for 8 or 9 years of self-support, including a 14
day Grand Canyon with all the required gear (fire pan, latrine, etc) We
do two or three trips a year on Idaho rivers (Middle Fork, South Fork,
Selway, etc) and have never had a problem.

Get a Prijon. Because of the studier hull, they have no center column
which makes for lots more room inside. They still make some very large
whitewater kayaks as well if you want to bring along the kitchen sink.
